Quick Peek at Friday’s Eats

Since today was race day I just did not get to my computer.  Friday’s eats deserve a quick glance.  I’ll keep it short and to the point.

Breakfast An encore performance of Pumpkin Pie Hot Cereal without the maple syrup.  I melted and drizzled the pb this time.

Lunch

A ramekin of Southwestern Veggie, Barley, and Black Bean Soup which was thick and dippable with a couple Archer Farms Organic Blue Corn Tortilla Chips.

I also had a simple salad of spinach, raisins, coconut, sunflower seeds, olive oil, and red wine vinegar.

Early Dinner (4:00)

A roasted sweet potato, which I drizzled with pb and dashed with unsweetened shredded coconut (not pictured).  Sounds crazy, but it was incredible! I also roasted a zucchini with olive oil, sea salt, oregano, and basil.  I had to eat this so quickly, because I had to go to work!

I got to leave work early and had second dinner at 8:00.

A salsa flavored tortilla with guacamole, beans, sauteed onion and bell pepper, and lettuce with a side of guacamole and Archer Farms Organic Blue Corn Tortilla Chips and some spanish rice.

I finished the night with an iced decaf coffee and some of the failure pb bread.

It was so hard to go to sleep, because I was so excited! I cannot wait to tell you all about it!
